This weekend, we celebrated a friend’s birthday and rather than cupcakes, a request was made for my potato stuffed poblano peppers.  I  had a version of this at the Rokerj in Phoenix, so I went home and whipped up my own version. It’s become a favorite and since it’s time for grilling season again I present to you with limited interruption:

Stuffed Poblano Peppers and other delectable items

they crackle and pop as they heat up!

Over high heat, sear the poblano peppers until the skin is blistered and charred. This takes anywhere from 2-5 minutes on each side of the pepper. Make sure the entire outside is well crisped. This part is best when done on a grill. If you can’t grill because it’s still snowing where you live, then you should move to Arizona.  It was 90 degrees yesterday!  Or you can also use a broiler on high setting. They say write about what you know.  I think this philosophy applies to charitable contributions as well.  So when I found out that Aunt Rita’s Foundation was hosting a bake sale to raise money for AIDS awareness, I sprang into action ….. in the kitchen.

Last night I baked 75 cupcakes and had a blast doing it. Chocolate & Peppermint, Red Velvet & Cream Cheese, Chocolate Espresso & Maraschino Cherry, Vanilla Funfetti & Amaretto were my contributions. No need to tell you I am “whipped” today, but when I saw the happy face of the volunteer who picked up my little goodies, it made it all worth it.

I love cupcakes.   This is an obvious statement.  My first adult taste of cupcake goodness happened in 2005 at a Starbucks near Lincoln and Scottsdale road.  Vanilla cupcake with vanilla bean frosting and brown sanding sugar.  I call this “the gateway cupcake.”
